Aussie Club Sandwich
Between 3 slices of toast add the following
1st Slice of toast then

  • Lettuce
  • Beetroot
  • Tomato

2nd Slice of toast then

  • Egg

Chicken or Lamb or Beef (ring PFD and see what they have)

You can add some Sauce or Mustard and Salt & Pepper 
Cut diagonally in half and serve with serviettes for $9.90 whether they are ‘Eating In’ or ‘Take Away’

Pasty Sandwich
A member recently told us that ‘This is the only way they would eat a pasty.’ This is totally unique and no image available on the internet.
It could be a world 1st. 
Take a hot Balfours pasty and gently cut and lift the pasty lid without breaking the lid away from the pasty

Add either some or all the following

The bread price is about to be increased from the 1st July 2014. At this time the cost price will be increased to $2.38 (normally $2.80) with a suggested sell between $2.95 and $3.25.

The Trading Terms we all enjoy from this Partner Company have been tweaked and the understanding now for all members is that all promotional lines need to be actioned by each member so that you can get the extra promotional discount on offer.

This means that each member will need to place the promotional tickets that are supplied onto the fridge at the ‘Suggested Price’ or lower. 
You can’t go to a higher sell price until the end of the promotional date. 

Just remember that if you don’t use the tickets at their suggested sell price then you won’t get the SPECIAL price but you will still receive the normal Trading Terms. 

WHY WOULD YOU EAT FROM HERE
On a recent visit to a members shop it was pleasing to see that the door was wide open, it was clean inside and well stocked. 
The owner was happy, greeting ALL customers as they entered his shop and saying goodbye to ALL customers when they left.
He talked to and served up to 7 customers at the one time with chips, hotdogs, sandwiches, pies & sausage rolls.

His business has more than doubled since he took over 12 months ago and is still growing.
His sausage rolls which he personally makes sell for $4 each and he also makes his own pies which he sells for $7.50 with a can of coke.

Another member featured in the newsletter about 12 months ago tells me her sales are near 3 times what they were this time last year. The deli which is painted orange, is also building her reputation on great food and a clean well lit shop. 
This member is positive and her effortless smile welcomes customers into her shop.

Sales are based around the traditional deli lines but the introduction of rotisserie chickens and her large selection of salads selling for 3 salads for $10 have driven sales upward.

Many members sell ‘Chips & Gravy’ and apparently it’s very popular. The fact that you might not eat this meal doesn’t mean you can’t sell a lot of them. 
Recently a member added a sign next to her menu window advertising a twist to this snack, a handful of grated cheese. (The cheese is purchased in bulk from Lion and the member adds a $1 for the cheese.)

Chips, then Cheese, then Gravy. Apparently it’s an English favourite. Why not try this at your shop but put up a sign and see if you too can sell this snack over the Easter break.
This member has found that this line is now out sells her regular Chips & Gravy sales.

Again this store is similar to the other 2 member’s store. Clean, well presented, plenty of stock, doors open, lights on, happy smiling staff, greeting customers and introducing new food lines. 
Sales are again based around traditional deli products but the owner is introducing new food lines.

This member has also been rewarded with an increase in sales over last year. It hasn’t been as big as the other members but it is happening.

PRODUCT PRICING
When you go to your local supermarket do you check the price being charged on the shelf? YES WE ALL DO!

When in Coles or Woolworths if there is no pricing on products then in the majority of cases we won’t buy.
Our customers are all doing exactly the same in our shops when they can’t see a price, they don’t buy.

The average spend in convenience stores is $10.06 and they purchases 2 items.
If your customer doesn’t know what you are going to charge them they are very likely to:
Walk out of your store and go else where
Purchase 1 item instead of the average 2
Purchase 2 smaller items than they originally planned too

This means your customers spend less than what they had planned too in your store. 
Make sure all products, even those in the fridge have price ticketing on them.

BALFOURS HOT X BUN with COFFEE
Hopefully you are a Barista and can make a great coffee, but how do you prepare the Hot X Bun for your customer.

Hot Cross Buns with their combination of spicy, sweet and fruity flavours have long been an Easter tradition in Australia. 

Firstly you take a bun out of the pack and cut it horizontally through the centre. You will need to place the 2 halves in a toaster or under the griller until lightly toasted on both sides.

When the halves are golden brown remove them from the heat and liberally butter the inside faces of the bun. Preferable use real butter but margarine will do. Eat straight away while the butter is melting and the bun is hot.

For a decadent twist add some jam or honey after the butter and wash down with a sensational coffee.

Under no circumstances should these buns be microwaved.

Many members have enjoyed good Xmas & holiday sales. These members have had airconditioning always on, very cold drinks for sale and an inviting icecream display right where the customers trip over them.

SUPERMARKET TRICKS

Supermarkets, shopping centres, even the On the Run shops are using tactics to lull their customers into spending more money while they are in their stores.

Maybe we can adapt some of them to work for us.

Relaxation Zone – The area from the car to the inside of the shop needs to be uncluttered, clean, have signs with big lettering and then entering the shop, action, bright lights, friendly smile. Look at your shop and ask yourself ‘How can I make it better for my Customers’?

Store Layout – Milk, Bread are all away from the entrance. The customer must walk the shop passing other sales opportunities. If your milk, bread and papers are near the front door how are you slowing your customers down to encourage them to spend more?

Shop Environment – Supermarkets will ensure that there are no clocks to see and the temperature is regulated so that customers are relaxed and lose track of time.

They will introduce smells of pleasant scents such as coffee to prolong the customers stay.

How can you take advantage of these ideas?

Music - This is another weapon used to enhance your customers’ experience. Playing classic music helps to slow the shopping process down while increasing the customer spend.

Pop music and Rock n Roll will speed up the customers.

Rap music doesn’t rate at all so what music are you playing?

Lighting – They use this extensively on promotion lines. This will identify to the customer a bargain and induce the customer to buy. Softer lighting on the other hand can relax us. Should we vary our light, how hard can it be?

Eye Level – This is where they put high volume, high profit wanted lines. We should check our shop layout now, can we do it better?

Besides these areas they also look at trolley size, floor tile size and floor displays that the customer is forced to navigate around.

You don’t have trolleys then maybe you should or at the very least some baskets for customers to put things in while shopping. This will encourage your customers to buy more.

THE DISTRIBUTORS

January you had Mars @ 99 cents each and in February you have Cadbury’s & Nestle Medium Bars @ 99 cents. You can still capitalize of these products by using dump bin displays with ticketing @ 2 for $2.95.

If your shop is airconditioned there shouldn’t be any problems with chocolate melting.

The Balfours promotion for February is based on their bestselling cake line, Custard Tarts.

Their reps will be visiting store with point of sale ticketing and some 'A' frame inserts.

This could be a major draw card for your food business starting from 9am all the way through the day to when kids come home from school.

The suggested sell of ‘2 for $4.90’ will give you approximately 30% gross profit.

DON’T CLOSE YOUR DOORS

We have spent a lot of the last 6 months working with some stores trying to prevent them from closing the doors and losing everything.

In some cases this has worked in others not so much.

The hardest thing sometimes is to take advice.

Scenario 1

I will stop selling Cigarettes , Confectionary and as many drinks as people come here for my food 

Result: The food was not that great , people went there for the deli lines and they closed the doors.This store was on a road with great parking ,no opposition. The owners have declared bankruptcy. Before their decision to stop selling the lines they were doing $14,000 a week , they went to $2000 a week in just 2 weeks.

Scenario 2

The owner told us “If I cut my stock down , I can buy more often and my profit will rise.”

Result : Customers notice when there is not enough stock and their sales went from $12,000 to $6000 in 3 weeks.

Did you adjust the pricing of your pies and pastys and implement the price difference between Balfours and the opposition brands.

Many stores have done this and have not seen their unit sales go down , so their profit has gone up .

Remember a clean pie warmer sitting on the counter gets you sales , we recently had a member take over another store and it took him 2 weeks to clean and shine the pie warmer to a standard that enticed people to buy from the warmer.

WINDOWS

Windows are one of the greatest customer drawcards that you can have and we cannot impress upon you how much difference a clean and clean surrounds of your store makes.

  • The days of old advertising signage being stuck around entrances has long gone.
  • The days of posters stuck on windows advertising the local jumble sale has long gone 
  • Put up a signage board next to your store or in your store 
  • Use this to let local businesses that come into your store advertise 
  • Also clean your windows or get them cleaned 

Blacked out windows are not good for security in stores – nice clean windows and lights on allow people passing by to see into the store.

Balfours will have a small price rise during October and all stores will be advised by mail and we will put this up on the website as soon as we are given the new pricing .

Vilis will also undergo a price rise effective 30th Sept

  • Decals that are old and peeling should come off.
  • Adverts that are old , should come off

Clean windows look far better so that customers can see into your store

PRICING OF PIES / PASTYS

Pricing of pastry products from bakeries is varied across all stores but it is all about making the correct profit from lines across the range and suppliers.

You cannot sell all pies and pasties for the same price , while it maybe easier for your staff it is costing you profit 

One system that is used by a lot of stores is to double the cost price and minus 30c and add on GST

Please see below for an example:

Cost Price x 2 :$3.88 - $1.94

Minus 30c :$3.58

Plus GST:$3.95

Suggested Sell: $3.95

Product: Opposition Pie

Cost Price x 2 :$5.20 - $2.60

Minus 30c :$4.90

Plus GST :$5.40

Suggested Sell: $5.40

COCA-COLA AMATIL

Yes we are in winter but now is the time to do what many stores have done and look at who supplies drinks ( carbonated beverages ) to your store.

Many stores have taken the time to relay their fridges to increase their discount from Coca-Cola Amatil while the cooler weather is here.

Remember 85% of consumers that visit your store will want to buy a Coke product.

Times change and despite some of the negative publicity we sometimes receive a well run shop that: 

  • Has enough stock to satisfy customers and guarantee a good turnover 
  • Is clean
  • Has fresh food at reasonable prices
  • Runs promotions / specials

Will survive , prosper and do well .

Don't end up in a story like this recent one in The Advertiser

MEMBERS DOING A SIGNATURE DISH

Last newsletter we talked about 4 members achieving huge increases in sales over last year. Just the other day another member said he was getting a 50% increase in sales over last year but this was being achieved through his grocery range and filled up his shop with stock.

Mostly these increases have been done by utilizing great food deals and in some cases having a Signature Dish. This is a dish that enhances your reputation and brings customers from afar in search of a wonderful feed, such as the homemade pies one member in the south is making from scratch. In an industrial area this member is forging a reputation for a high quality delicious product that his customers are coming back for time and again.

It is not unusual for the customers to buy extra pies to take home so that they can eat them later.

The pies sell for $5.10 with no complaints just happy smiles.

So what about your shop, what can you do, what dishes are in your family history that you love? Is there a pork roast, a soup, a pasta dish, a curry dish? Could it be a chicken dish such as Chicken Feet that stands you apart? This dish was suggested to us recently but you would need to be in an appropriate area to sell this line.

Chicken Feet are delicious and can be used in a soup or as part of a snack.

Another member has for sale mugs of soup with up to 3 choices on any day. Some soups that have worked well are:

Potato & Leek

Pea & Ham

Chicken Noodle

Each is served with a slice of fresh crusty bread on day 1, and then on day 2 they are served with toasted crusty bread for $6.50 a serving.

If you don’t have a Signature Dish what about some great signage for your shop. It does mean you will need to spend some money but it will increase your sales and therefore lift your profit.
